Family Style: Steak and Okra Frites

Last year, I signed up to create a few recipes as entries into a contest for Spiceology, which would be used to create a cookbook for the National Kidney Foundation. They sent me, among a few hundred others, sample sizes of their salt-free seasoning to use and submit my entries.
Here is one of my entries for a simple family-size meal that is a spin on a classic steakhouse favorite. It uses a fairly inexpensive cut, therefore keeping it in your budget. Because I do eat salt, I now purchase the salted versions of these seasonings or add salt to the product during cooking.

Steak:
1 flap steak (1-2 lbs)
2-3 tbsp Black Magic
Rub steak with Black Magic thoroughly. Be sure to rub in any crevices as much as possible. Set in the refrigerator to marinate for 2 hours or up to 24.
Sous Vide Method:
Set Circulator for 2 hours at 130°F
Once done, sear both sides in a cast-iron skillet on high heat or under the broiler. High heat is important to sear, as the steak is already cooked.
Oven Method: Place steak on a baking sheet with a rack under the broiler for 5 minutes per side.
Rest the steak for 10 minutes before slicing. This should be cut on the bias. Medium Rare 130-135°F
Medium 140-145°F
ProTip: Slicing against the grain: Look at how the grain is running on the steak. Use your knife at an angle slicing downward opposite the grain. If you’ve never done this before, slice one piece of steak to test tenderness before slicing the entire steak, you’ll know if it is cut incorrectly cut that first bite.
Okra Frites:
½ lb whole okra
6 tbsp Really Ranch
2 tsp Black Pepper
2 egg whites
2 tsp vinegar
Preheat Oven or Airfryer to 400°F
Slice okra lengthwise, each into two long pieces
Mix eggs white and vinegar in one dish, then Really Ranch and black pepper in a second dish.
Dip okra halves into the egg mixture and coat with seasoning.
Oven Method:
Place okra on a baking sheet with a rack an inch apart.
Bake 400°F for 10-12 minutes
Airfryer Method:
400°F 5-7 minutes
